Made my friend some dinner tonight, since he had to work all day.
– tomato-pesto salad with almonds
– strips of pepperjack cheese
– coconut chocolate chip Cliff bar
The salad is a recipe I found on Pinterest, and super simple. Just take some halved cherry or whole grape tomatoes (about 8 or 9 oz.), toss them in pesto (I’ve used both regular and basil pesto before), season with salt and pepper, and scatter almonds on top when serving. Aforementioned friend likes it and it’s really quick to make, hence why he gets it for dinner tonight.
